100% Natural Brown Sugar
Brown sugar is a sucrose sugar product with a distinctive brown color due to the presence of molasses. It is either an unrefined or partially refined soft sugar consisting of sugar crystals with some residual molasses content, or it is produced by the addition of molasses to refined white sugar.
Brown sugar is white sugar combined with molasses, which gives it a soft texture. Light and dark are the two most common styles of brown sugar. In general, the lighter the brown sugar, the more delicate the flavor. Very dark or old-fashioned brown sugar has a more intense molasses flavor.
Raw sugar comes from sugar cane, and it is a little brown when it is formed. It appears brownish because of the presence of molasses. Manufacturers of sugar will bleach the sugar to remove the molasses, and this makes the sugar white. Brown sugar is produced by adding molasses back to the white sugar. The molasses in brown sugar contains a number of minerals, which include calcium, potassium, magnesium and iron. The difference in taste between white and brown sugar is actually the taste of molasses, which will be milder in light brown sugar and stronger in darker brown sugar. Compared to white sugar, brown sugar has a sweeter and richer taste. It also has a moist and clumpy texture, which is different from the dry and grainy texture of white sugar.
Natural brown sugar, raw sugar or whole cane sugar is a brown sugar produced from the first crystallization of the sugar cane. Based upon weight, unrefined brown cane sugar, when fully refined, yields about 70% white sugar. There is more molasses in natural brown sugar, giving it a higher mineral content. Some natural brown sugars have particular names and characteristics, and are sold as turbinado, muscovado, or demerara sugar. Although brown sugar has been touted as having health benefits ranging from soothing menstrual cramps to serving as an anti-aging skin treatment, there is no nutritional basis to support brown sugar as a healthier alternative to refined sugars despite the negligible amounts of minerals in brown sugar not found in white sugar.
